Directions
  1. In a food processor, combine the flour, sugar, and salt. Add the chilled, cubed butter and pulse until the mixture resembles coarse crumbs.
  2. Add the egg yolk and pulse until the dough comes together.
  3. Press the dough into the bottom and up the sides of a tart pan. Chill in the refrigerator for 30 minutes.
  4. Preheat the oven to 375 degrees F (190 degrees C).
  5. Prick the bottom of the tart shell with a fork, line it with parchment paper, and fill with pie weights.
  6. Bake in the preheated oven for 15 minutes, then carefully remove the weights and parchment and bake for an additional 10 minutes, or until golden.
  7. In a large bowl, toss together the berries, sugar, cornstarch, vanilla extract, and lemon zest and juice.
  8. Pour the filling into the baked tart shell.
  9. Bake for 20-25 minutes, or until the filling is bubbly and the crust is golden.
  10. Allow the tart to cool before slicing and serving.
