  • 500ml of whipped cream
  • 1 jar of Morello cherries (drained, juice reserved)
  • 3 tablespoons of kirsch
  • Chocolate shavings for decoration

  1. Preheat your oven to 180°C (160°C fan) and grease a cake tin.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the bowl, and mix until the batter is smooth and well combined.
  4. Gradually add the boiling water to the batter, mixing continuously. The batter will be thin, but that's okay.
  5. Pour the batter into the prepared cake tin, and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is cooling, whip the cream until it forms soft peaks.
