Ingredients
  • 1 cup of water
  • 1/2 cup of unsalted butter
  • 1 cup of all-purpose flour
  • 4 large eggs
  • 2 tablespoons of sugar
  • 1/2 teaspoon of salt
  • 1 cup of heavy cream
  • 2 tablespoons of espresso powder
  • 1/2 cup of powdered sugar
  • 2 tablespoons of cocoa powder for dusting
Directions
  1. Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the water, butter, sugar, and salt. Bring the mixture to a boil.
  3. Reduce the heat, add the flour all at once, and stir it vigorously until the mixture forms a ball.
  4. Remove from heat and let it cool for a few minutes before adding the eggs, one at a time, making sure each egg is fully incorporated before adding the next.
  5. Transfer the dough to a piping bag and pipe 4-inch lines onto the prepared baking sheet.
  6. Bake in the preheated oven for 20 minutes or until golden brown. Let the eclairs cool completely.
  7. While the eclairs are cooling, prepare the espresso cream. Whip the heavy cream until soft peaks form. Gradually add the espresso powder and powdered sugar, and whip until stiff peaks form.
  8. Once the eclairs are cool, make a small hole in the bottom of each eclair and fill them with the espresso cream using a piping bag.
  9. Dust the filled eclairs with cocoa powder before serving.

The Entropic Espresso Eclairs are a unique twist on the traditional, custard-filled éclair. Their origin lies in the French choux pastry, but this version takes a detour into the vibrant world of coffee, specifically espresso, to introduce a new flavor profile.

The inspiration behind this recipe was the love for coffee and desserts. The idea was to incorporate the rich, bold flavor of espresso into a delicate, airy eclair to create a dessert that is not overly sweet but full of flavor.

The espresso cream filling is what sets this recipe apart. By replacing the traditional custard with an espresso infused cream, we introduce a depth of flavor that is not common in most éclair recipes. The dusting of cocoa powder adds a subtle bitterness that complements the espresso cream and balances the sweetness of the pastry.

These eclairs are perfect for serving at dinner parties or enjoying as a special treat. The combination of the flavors, the coffee aroma, and the soft, delicate pastry will surely impress your guests and satisfy your sweet tooth. So, roll up your sleeves and get ready to bake. Your kitchen is about to smell like a French patisserie!
