Ingredients
  • 1 1/2 cups of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1/2 teaspoon of salt
  • 9 tablespoons of unsalted butter, cold and cut into small pieces
  • 1 large egg yolk
  • 2 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1/4 cup of cornstarch
  • Pinch of salt
  • 4 large egg yolks
  • 2 teaspoons of pure vanilla extract
  • 2 cups of fresh raspberries
Directions
  1. Begin by making the pastry. Combine the flour, sugar, and salt in a large bowl. Add the butter and use your fingers to mix until the mixture resembles coarse crumbs. Add the egg yolk and mix until the dough comes together.

  2. Press the dough into the bottom and up the sides of a 9-inch tart pan. Refrigerate for 30 minutes.

  3. Preheat your oven to 375°F (190°C). Prick the bottom of the crust with a fork, line it with parchment paper, and fill with pie weights or dried beans. Bake for 15 minutes.

  4. Carefully remove the weights and parchment and bake for an additional 10-15 minutes, or until golden brown. Let it cool.

  5. While the crust is cooling, make the custard. In a medium saucepan, combine the milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

  6. In a separate bowl, whisk the egg yolks. Slowly pour half of the hot milk mixture into the yolks, whisking constantly. Then pour the yolk mixture back into the saucepan.

  7. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from heat and stir in the vanilla.

  8. Pour the custard into the cooled crust and smooth the top with a spatula. Refrigerate for at least 2 hours, or until set.

  9. Just before serving, arrange the raspberries on top of the custard.
