We call it the "Component Coq au Vin". It's a delicious stew that combines chicken, mushrooms, onions, and a rich red wine sauce. This dish is perfect for a weekend dinner or a special occasion.

Ingredients
  • 1 whole chicken, cut into pieces
  • Salt and pepper to taste
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 2 cups sliced mushrooms
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 2 tablespoons butter
  • 2 tablespoons flour
Directions
  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Cook until the onion is translucent.
  4. Add the red wine to the skillet, scraping the bottom of the skillet to loosen any browned bits.
  5. Stir in the chicken broth and tomato paste.
  6. Return the chicken to the skillet, and add the mushrooms, thyme, and rosemary.
  7. Cover the skillet and simmer for about 2 hours, or until the chicken is tender.
  8. In a small bowl, mix the butter and flour together to form a paste. Stir this into the skillet to thicken the sauce.
  9. Serve the Coq au Vin hot, with a side of crusty French bread.
