Ingredients
  • 1 medium spaghetti squash

Directions

  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside of each half with olive oil and sprinkle with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 40 minutes, or until the flesh is tender.
  5. While the squash is baking, heat a skillet over medium heat and add some olive oil.
  6. Sauté the minced garlic until it becomes aromatic, then add the cherry tomatoes.
  7. Cook the tomatoes until they start to soften, then remove the skillet from heat.
  8. Once the squash is done, remove it from the oven and let it cool slightly.
  9. Using a fork, scrape the squash flesh into spaghetti-like strands and place them in a large bowl.
  10. Add the garlic and tomato mixture to the bowl, along with the chopped basil.
