Ingredients
  • 14 oz firm tofu, drained and cubed
  • 1 cup sliced bell peppers (any color)

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 cup brown rice
  • Salt and pepper to taste
Directions
  1. Cook the brown rice according to package instructions and set aside.
  2. Press the tofu to remove excess water: wrap the tofu in a clean kitchen towel and place a heavy object on top for 15 minutes.
  3. In a large pan, heat 1 tablespoon of olive oil over medium heat.
  4. Add the tofu cubes and cook until golden brown. Remove tofu from the pan and set aside.
  5. In the same pan, add the remaining olive oil and the garlic. Sauté until fragrant.
  6. Add the peppers, carrots, and broccoli. Cook until the vegetables are tender.
  7. While the vegetables are cooking, mix together the soy sauce, sesame oil, and cornstarch in a small bowl.
  8. Add the tofu back into the pan, pour the sauce over the tofu and vegetables, and stir well to combine.
  9. Season with salt and pepper to taste.
  10. Serve the stir-fry over the cooked brown rice.
