Ingredients
  • 1 lb fresh tuna fillet
  • 1 lb small new potatoes
  • 1/2 lb fresh green beans
  • 4 large eggs
  • 1/2 cup black olives, pitted
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper
  • 2 tbsp fresh parsley, chopped
Directions
  1. Start by boiling potatoes in salted water until they are just tender. This should take about 15 minutes.
  2. While the potatoes are boiling, blanch the green beans in boiling water for 2-3 minutes until they are bright green and crisp.
  3. Rinse the beans under cold water to stop them from cooking further. Set them aside.
  4. In the same water used for the potatoes and beans, boil the eggs for about 10 minutes until they are hard-boiled.
  5. While the eggs are boiling, season the tuna with salt and pepper and sear it in a hot pan with a little bit of olive oil for about 2-3 minutes on each side.
  6. Once the tuna is cooked, set it aside to rest.
  7. In a small bowl, whisk together the olive oil, vinegar, mustard, and a pinch of salt and pepper to make the dressing.
  8. Once all the components are ready, assemble the salad by layering the potatoes, beans, sliced eggs, and tuna on a platter.
  9. Drizzle the dressing over the salad and sprinkle with the chopped parsley and olives.

The Salad Nicoise has its roots in Nice, France. It's a sort of culinary postcard from the Mediterranean, with its use of fresh, vibrant ingredients. But this isn't your standard Nicoise salad. Oh, no. This is the Depthwise Salad Nicoise, an Iron Chef twist on a classic.

"The inspiration behind this recipe was to take something familiar and elevate it. We wanted to show that salads can be hearty, satisfying, and complex. They can tell a story. That's what the Depthwise Salad Nicoise is - it's a story on a plate."

The typical Salad Nicoise would have canned tuna, but we've opted for fresh tuna fillet, seared to perfection. The dressing, too, is a departure from tradition. Instead of a simple vinaigrette, we've included Dijon mustard for a bit of a kick. The result is a salad that's familiar yet surprising, traditional yet innovative. It's a salad that's got depth. We hope you enjoy making - and eating - the Depthwise Salad Nicoise as much as we did creating it.
