Ingredients
  • 500g fresh salmon fillet, skin on
  • 2 tablespoons of coarse sea salt
  • 2 tablespoons of brown sugar
  • 1 tablespoon of crushed black pepper
  • Fresh dill, roughly chopped
  • 1 cup of mustard
  • 1 tablespoon of white wine vinegar
  • 3 tablespoons of olive oil
  • 1 loaf of rye bread
Directions
  1. Begin by preparing the salmon for curing. Combine the sea salt, brown sugar, black pepper and half of the chopped dill in a bowl. Spread this mixture evenly over the salmon fillet, ensuring it is thoroughly coated.
  2. Once coated, wrap the salmon tightly in cling film and place it in the refrigerator to cure for 48 hours.
  3. While the salmon is curing, prepare the dill mustard sauce. Combine the mustard, white wine vinegar, olive oil, and the remaining chopped dill in a bowl. Mix until it forms a smooth sauce.
  4. After 48 hours, remove the salmon from the refrigerator. Rinse off the curing mixture and pat the salmon dry. Thinly slice the salmon.
  5. For the rye bread crisps, slice the rye bread thinly and toast until crispy.
  6. To serve, arrange the thinly sliced salmon on a plate, drizzle with the dill mustard sauce, and accompany with rye bread crisps.
