Ingredients
  • 1 whole chicken (about 1.5 kg)
  • 2 onions, halved
  • 2 cloves of garlic, crushed
  • 1 piece of ginger, peeled and sliced (about 2 inches)
  • 2 pieces of turmeric, peeled and sliced (about 1 inch)
  • 4 star anise
  • 1 cinnamon stick
  • 1 tbsp coriander seeds
  • 4 cloves
  • 1 tbsp salt
  • 1 tbsp fish sauce
  • 200g rice noodles
  • Fresh herbs for garnish: mint, cilantro, basil
  • 2 limes, quartered
  • 2 chillies, sliced
Directions
  1. Place the chicken, onions, garlic, ginger, turmeric, star anise, cinnamon stick, coriander seeds, cloves, salt, and fish sauce in a large pot. Add enough water to cover the chicken and bring to a boil.
  2. Reduce the heat and simmer for about 1 hour until the chicken is cooked through. Skim off any foam that forms on the surface.
  3. Remove the chicken from the pot and let it cool. Shred the meat and set it aside.
  4. Strain the broth through a fine-mesh sieve into a clean pot. Discard the solids.
  5. Prepare the rice noodles according to the package instructions.
  6. To serve, divide the noodles among serving bowls. Top with shredded chicken and pour the hot broth over. Garnish with fresh herbs, a squeeze of lime juice, and sliced chillies.
