Ingredients
  • 1 cup dried chickpeas, soaked overnight

  • 2 large onions, finely chopped

  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 bunch fresh parsley, chopped
  • 1 bunch fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 6 cups vegetable broth
  • Lemon wedges for serving
Directions
  1. Rinse the chickpeas and lentils under cold water until the water runs clear.
  2. In a large pot, heat the olive oil over medium heat. Add the onions and garlic and cook until they become translucent.
  3. Add the tomato paste, diced tomatoes, cumin, turmeric, cinnamon, and paprika to the pot. Stir until all the ingredients are well combined.
  4. Add the chickpeas, lentils, parsley, cilantro, salt, pepper and vegetable broth to the pot. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for about 1 hour, or until the lentils and chickpeas are tender.
  6. Serve the soup hot with lemon wedges on the side.
